Gluten

 

 

Gluten is basically a form of protein that is found in wheat, barley and rye. Since it is found in cereal, it is also present in different types of breads as well. Gluten is usually removed from wheat flour by rinsing the bread dough and then kneading it untill all of the starch is removed. Gluten essentially provides the elasticity and stickiness to the bread or dough which gives it a chewy feeling. The gluten that is removed, feels sticky and has the texture of chewing gum. Gluten may cause allergic reactions in people who are sensitive to foods that contain this protein.

Gluten intolerance may often result in a disease known as Celiac Disease, also known as Gluten Enteropathy. It is considered to be a hereditary disorder of the immune system which is a life-long disease. Ingesting gluten leads to irreversible damage of the lining of the small intestine. This basically results in weakening of the immune system since essential nutrients and vitamins are not absorbed. Given below are some harmful effects of gluten.
